For the second attempt I went with this wired PS3 controller:
I actually ordered it on accident, thinking it was the previous controller I had hacked into pieces. Turns out this one is going to be a lot easier to use as an input interface.
My plan is to mount the controller in the clear project box so that the two analog joysticks are accessible from the front of the panel. The contact board for the other buttons is joined to the analog joystick board by a ribbon cable. I can easily identify the circuits that route to the ribbon cable and then discard it. No soldering necessary! The circuits are labeled below. "###" is the common.
